Training system: espalier hold with spurred cordon

Density system: 4000 stumps/ha

Grape harvest period: end of September

Harvest: exclusively by hand in boxes of 25 kilos.

Alcoholic fermentation: at the expense of selected ferments at temperatures below 23°C in stainless steel
containers, middle-long contact of must with vinasse and requent traditional reassemblies en plein air.

Manolactic fermentation: generated but not completed
Ripening: preserved in stainless steel containers for
eighteen months in Tonneaux French oak barrels of first conveyance of 500 litres after the end of alcoholic fermentation.

Organoleptic marks: very strong ruby red colour with
scents of red fruit which are typical of this variety.
Perfect balance with tannic acid and tip-top quality.

Alcohol content : 14,5% Vol

Food pairing: serve at 16-18°C on main succulent dishes and meat dishes.
